Summary: | This text discusses the livestock market and beef consumption. There are two elements which are part of the same chain of analysis: on the one hand, the cultural practices in relation to livestock, as well as the actions taken to strengthen the market and increase consumption, especially in two population centers of the region: Paipa and Tunja; on the other hand, the intention is to show the relevance that beef consumption acquired in these parts of the department of Boyacá during the 20th century, which was incorporated into the diet and caused changes in the food culture. This book analyzes case studies focused on the livestock and beef trade, the relation of these processes in the transformation of the landscape in the lives of the indigenous peoples and subsistence farmers, and the changes in the activities of the cities, the people’s daily lives and the food culture in the department of Boyacá, particularly in Tunja and Paipa. In some cases, allusions are made to transgressions that can be seen either as tradition or as manifestations of resistance against local authorities.
