| description | This text discusses the livestock market and beef consumption. There are two elements which are part of the same chain of analysis: on the one hand, the cultural practices in relation to livestock, as well as the actions taken to strengthen the market and increase consumption, especially in two population centers of the region: Paipa and Tunja; on the other hand, the intention is to show the relevance that beef consumption acquired in these parts of the department of Boyacá during the 20th century, which was incorporated into the diet and caused changes in the food culture. This book analyzes case studies focused on the livestock and beef trade, the relation of these processes in the transformation of the landscape in the lives of the indigenous peoples and subsistence farmers, and the changes in the activities of the cities, the people’s daily lives and the food culture in the department of Boyacá, particularly in Tunja and Paipa. In some cases, allusions are made to transgressions that can be seen either as tradition or as manifestations of resistance against local authorities. |

El texto aborda el mercado del ganado y el consumo de carne de bovino. Dos elementos que hacen parte de una misma cadena de análisis: de un lado, las prácticas culturales sobre la ganadería y las acciones desplegadas parafortalecer su mercado y su consumo, especialmente en dos ejes poblacionales de la región: Paipa y Tunja; de otro lado, se pretende poner de manifiesto la importancia que ha adquirido, durante el siglo XX, el consumo de la carne de bovino en estos espacios del departamento de Boyacá, que generaron cambios en la cultura alimenticia con la incorporación de la carne en la dieta. En este libro se analizan estudios de caso centrados en el comercio del ganado y de la carne, la relación de estos procesos en la transformación del espacio en la vida de los indios y de los campesinos; los cambios surgidos en las actividades de las ciudades, la vida cotidiana y la cultura alimentaria en el departamento de Boyacá, particularmente en Tunja y Paipa, y en algunos casos se alude a trasgresiones que, pueden ser asumidas como tradición o como manifestaciones de resistencia a las autoridades locales.
