Summary:Cheese is a gastronomic good that has been used in the inhabitants’ diet from rural areas of Paipa municipality, in the department of Boyacá, Colombia. The purpose of this text is to show what is behind the cheese production: the artisanal and traditional, the symbolic and identity referents built by the inhabitants of the rural area in Paipa municipality (Boyacá). Their narratives were of great relevance to approach an understanding of the social and cultural meaning woven by the communities regarding the product. In the voices of producers, traders, and consumers, narrative codes were identified  hrough which values around this work were perceived. The analysis of these codes revealed identity manifestations associated with physical space, territory, and daily life, as well as the connections and affinities established between neighbors and family members, their impressions, and values. In this way, heritage and cultural identity references that  are reflected in imaginaries, interpretations, and symbolisms created around cheese as a food, a product sold in the market, and a traditional expression were evidenced.
