description The potato is a food that allows us to understand the settlement process and the development of complex societies in America. The archaeological, ethnohistorical, and ethnobotanical evidence compiled for this article shows the presence and manipulation of solanum sp. over 13,000 years ago. This includes archaeological findings related to potatoes from micro- and macro-remains, as well as representations that are part of museum collections. We illustrate the description, production, and uses of potatoes in two production centres in South America during the colonial era: the Cundiboyacense highlands in the northern Andes and Huarochiri in the central Andes. Finally, we explore the uses, meanings, and forms of production of native potatoes from the Andean worldview. As a result, we find a great diversity of potatoes that give an account of cultural changes in the uses, conceptions, practices, and management since pre-Hispanic times, leading to worldwide potato consumption and production.

La papa es un alimento que permite comprender el proceso de poblamiento y desarrollo de sociedades complejas en América. Las evidencias arqueológicas, etnohistóricas y etnobotánicas compiladas para este artículo dan cuenta de la presencia y manipulación de solanum sp. Desde hace 13000 años. Para ello, se presentan los hallazgos arqueológicos que relacionan la papa en investigaciones de microrestos, macrorestos y representaciones que hacen parte de las colecciones de museos, se ilustra el proceso de descripción, producción y usos en dos centros productivos de papa en América del sur en época colonial: el altiplano cundiboyacense en los andes del norte y Huarochiri en los andes centrales. Finalmente, se retoman los usos, significados y formas productivas de las papas nativas desde la cosmovisión andina. Como resultado, encontramos una gran diversidad de papas que da cuenta de cambios culturales en los usos, concepciones, prácticas y manejos desde épocas prehispánicas, generando un consumo y producción de papa en el mundo. La pomme de terre est un aliment qui permet de comprendre le processus de peuplement et de développement de sociétés complexes en Amérique. Les traces archéologiques, ethnohistoriques et ethnobotaniques compilées pour cet article démontrent la présence et manipulation de solanum sp. depuis 13000 ans. Pour cela, les découvertes archéologiques qui concernent la pomme de terre dans les enquêtes sur les microrestes, les macro-restes et les représentations faisant partie des collections de musées sont présentées; on illustre également le processus de description, de production et d’utilisations dans deux centres de production de pommes de terre en Amérique du Sud à l’époque coloniale: le plateau cundiboyacense dans les Andes du nord et Huarochiri dans les Andes centrales. Finalement, on revient sur les utilisations, les significations et les formes productives des pommes de terre indigènes dans le cadre de la vision du monde andine. En conséquence, nous trouvons une grande diversité de pommes de terre qui explique les changements culturels dans les usages, les conceptions, les pratiques et la gestion depuis l’époque préhispanique qui sont à l’origine de la consommation et la production de pommes de terre dans le monde.
