description The article analyses the food practices of the farmer population located in the forest-steppe region of Ukraine during the artificial famine that took place between the fall of 1932 and the spring of 1933, known as the Holodomor. For the study, forty archived testimonies were analysed from a phenomenological perspective to understand the meaning survivors gave to the ingestion of plant and animal-based substitute foods. The study identified that during and after the famine, the Ukrainian farmer population ceased to consider eating as a social and political event that kept them united under a shared national consciousness, and instead became the means by which they obtained the energy necessary for physical stability.

Para el desarrollo del estudio se analizaron cuarenta testimonios de archivo, desde una perspectiva fenomenológica, a fin de comprender el significado que los sobrevivientes le dieron a la ingesta de sustitutos alimenticios de orden vegetal y animal. Como resultado se identificó que durante la hambruna y después de ella, el campesinado ucraniano dejó de considerar el comer como un acontecimiento de significación social y política, que lo mantenía unido bajo una misma conciencia nacional, para convertirse en el medio a través del cual ellos adquieren la energía que el cuerpo requiere a fin de permanecer físicamente estable.  Cet article analyse les pratiques alimentaires de la paysannerie située dans la région de steppe forestière de l’Ukraine, lors de la famine artificielle déclenchée entre l’automne 1932 et le printemps 1933, appelée Holodomor. Pour la réalisation de cette étude, une quarantaine de témoignages d’archives ont été analysés dans une perspective phénoménologique, afin de comprendre le sens que les survivants donnaient à la consommation de substituts alimentaires végétaux et animaux.En conséquence, il a été identifié que pendant la famine et après celle-ci, la paysannerie ukrainienne a cessé de considérer l’alimentation comme un événement d’importance sociale etpolitique, qui la maintenait unie sous la même conscience nationale, pour devenir le moyen par lequel elle acquiert l’énergie dont le corps a besoin pour rester physiquement stable.
