En el Municipio de Ciénega, Boyacá, se conformó la Asociación de productores de uchuva del municipio (ASOPROCIEN) con cincuenta productores. El total de la producción se envía sin seleccionar a la exportadora Andes Export Company. Esta empresa selecciona el producto y devuelve a la Asociación la uchuva que presenta el defecto de rajado, lo cual corresponde al 20% de la producción. Se propone desarrollar una línea de procesamiento para elaborar mermelada de uchuva, sometida a un panel sensorial y análisis microbiológico, con el fin de obtener un producto inocuo y aprovechar de una manera rentable una parte de la producción que no es posible comercializar en fresco.
