description In the search for the decrease in the use of antibiotics in animal feed, the development of nutritional additives that promote animal health and the best use of nutrients in plant-based foods has been reached. In this work, an analytical method was developed to quantify the activity of the enzyme endo-β-mannanase in a commercial nutritional additive and in soybeans commonly used as a feed source for pigs and chickens. The method used is based on the determination of reducing sugars with 3,5-dinitrosalicylic acid complemented with ultraviolet spectroscopy, where by means of a mannose calibration curve it is possible to determine the amount of sugars released by an equivalent unit of enzyme (U) in the raw material, in a commercial nutritional additive and when added in the soybeans. Additionally, the determination of the enzymatic activity was made by the method of liquid chromatography with an infrared detector, the signal of the mannose monosaccharide standard could be identified, but the separation, identification and subsequent quantification of the reducing sugars produced or released by the enzyme were not achieved enzyme activity in the feed matrix.

En la búsqueda de la disminución del uso de antibióticos en la alimentación animal se destaca el desarrollo de aditivos nutricionales que promueven la salud animal y el mejor aprovechamiento de nutrientes en alimentos de origen vegetal. En este trabajo se desarrolló un método analítico para cuantificar la actividad de la enzima endo-β-mananasa en un aditivo nutricional comercial y en la soya comúnmente usada como fuente de alimento para cerdos y pollos. El método usado se basa en la determinación de azúcares reductores con ácido 3,5-dinitrosalicílico complementado con espectroscopia ultravioleta, donde mediante una curva de calibración de manosa se logra determinar la cantidad de azúcares liberados por una unidad equivalente de enzima (U) en la materia prima, en un aditivo nutricional comercial y cuando es adicionado a la soya. Adicionalmente, se hizo la determinación de la actividad enzimática por el método de cromatografía liquida con detector infrarrojo, se pudo identificar la señal del estándar de monosacárido manosa, pero no se logró la separación, identificación y posterior cuantificación de los azucares reductores producidos o liberados por la actividad de la enzima en la matriz del alimento.
