The industrial production of chicken meat is fast because it takes advantage of the genetics that respond to the nutritional and non-nutritional additives that are incorporated to a balanced feed; however, there is a sector of consumers that prefer meat of natural breeding chicken, without the use of those additives. The aim of this work was to assess chicken breeding using natural foods considering the management and quality of the product. The method used was to evaluate the management, the level of preference of the product and assess the perspectives in the generation of employment and income. The results show consumers' preference for chicken meat obtained with natural foods, because it presents good appearance, color, texture and flavor with respect to the industrial chicken that is available in the markets and is consumed normally. If the extensive production of natural breeding chicken in peri-urban areas is achieved, and taking into account that this type of production arouses interest in consumers eager for natural and quality products, it would be possible to create sources of employment and income to small producing and trading units taking part in the breeding chain (raw materials producers, inputs and others), improving their quality of life.

La población de Arequipa y de las grandes urbes se alimenta principalmente de carne, pollo, res, cerdo y ovino. El consumo de pollo en el Perú en el año 2016 fue de 52 kg por habitante. La producción industrial de carne de pollo es veloz, porque, además del manejo intensivo en la producción, aprovecha la genética que responde a los aditivos nutricionales y no nutricionales incorporada a los alimentos balanceados formulados para ese fin; sin embargo, existe un sector de consumidores que prefiere carne de pollo de crianza natural, sin el uso de esos aditivos. El objetivo de este trabajo fue valorar la crianza de pollo para carne empleando alimentos naturales, considerando el manejo y la calidad del producto. La metodología empleada fue la evaluación del manejo, el nivel de preferencia del producto y la valoración de las perspectivas en la generación de empleo e ingresos. Los resultados muestran la preferencia de los consumidores por la carne de pollo obtenida con alimentos naturales, justificando su preferencia por el sabor, el color y la textura con respecto a la carne de pollo “industrial” disponible en los mercados y consumida habitualmente por la población. Si se logra la producción extensiva de pollo de crianza natural en zonas periurbanas, y teniendo en cuenta que este tipo de producción despierta el interés en consumidores ávidos de productos naturales y de calidad, se posibilitaría la generación de empleo e ingresos a pequeñas unidades productoras y comercializadoras que participarían en la cadena como productores de materias primas, insumos y otros, lo cual mejoraría su calidad de vida.
