Este artículo estudia cómo las mujeres pudieron participar en la construcción de la nación a través de la transformación de la cultura culinaria. Las mujeres, tanto de élite como de sectores populares, se encargaron de cambiar los hábitos cotidianos con el propósito de crear una sociedad moderna que pudiera fomentar el proyecto republicano. Se analizan las transformaciones que vivió la alimentación, la posición de la mujer en la sociedad y cómo éstas adaptaron el consumo de bienes y recetas europeas. En consecuencia, el artículo explora los roles que jugaron las mujeres en la creación de una nueva identidad nacional durante el siglo XIX. Cet article étudie comment les femmes ont pu participerà la construction de la nation à travers la transformationde la culture culinaire. Les femmes, tant des élites que dessecteurs populaires, étaient chargées de changer les habitudes quotidiennes dans le but de créer une société moderne capable de promouvoir le projet républicain. Les transformations qu’ont connues l’alimentation, la position des femmes dans la société et la manière dont elles ont adapté la consommation de produits et de recettes européennes sont ici analysées. Par conséquent, l’article explore les rôles joués par les femmes dans la création d’une nouvelle identité nationale au cours du XIXe siècle.
